Garlic scapes

Garlic scapes are the flowering stem of the garlic before it flowers which we pick to send all the energy of the plant to the bulb! If you grow your own garlic, it is a crucial step to getting bigger bulbs. The stem very tender and spicy. It can be used raw, cooked and can be prepared in many fun ways. Amongst the favorite ways to prepare them: garlic scape salt, pesto, refrigerator pickles, roasted on a grill/bbq, tempura, the options are infinite! To prepare it you need to cut the flower part on the scape which is edible but too fibrous.
